fifteen minute Healthy Roasted Chicken and Veggies
- two tbsp. olive oil
- one pound chicken breast, cutting to bite-size pieces
- red onion
- one c. sweet pepper
- two or three c. broccoli flowers
- half c large tomatoes, diced
- half tsp. spices
- half tsp. basil
- half tsp. garlic powder
- a quarter tsp. Red pepper
- Salt and pepper to taste
Heat oven to four hundred seventy five degrees.
Put the vegetables and chicken pieces in a large bowl.
Add olive oil, thyme, basil, garlic powder, paprika, salt and pepper to taste. Mix well until covered and assembled.
Spread chicken and vegetables in an even layer on a large baking sheet. Bake for fifteen minutes, until the chicken is cooked through and the vegetables are cooked through.
