- eight slices of bologna
- three tablespoons of butter
- one onion, chopped
- four cups hot mashed potatoes
- 1½ cups grated cheddar cheese
how to make it
Preheat oven three hundred fifty degrees F (175 degrees C). Butter 1 1/2 quart baking plate.
Heat a skillet over medium-high heat. Frying bologna slices in hot skillet until golden brown on both sides, for one minute per side. Drain on a plate lined with paper towel. Wipe excess fat from pan, reduce heat to medium and stir in butter and onion. Cook and stir until the onion has softened and become translucent, about five minutes. Stir the onions into the hot mashed potatoes.
Spread half of the mashed potatoes in the prepared baking dish. Layer with half the fried bologna and sprinkle with half the cheese. Repeat with the remaining ingredients.
Bake uncovered in preheated oven until cheese is bubbly and center is hot, about thirty min.
