grandma’s creamy Italian cucumber salad

for power:
  • four large cucumbers, peeled and thinly sliced
  • two cups large garden tomatoes, seeded and chopped
  • half cup onion (any kind), finely chopped
  • half cup sliced ​​green olives
  • one c cherry tomatoes
Place all salad ingredients, except for the cherry tomatoes, in a large mixing bowl and toss until everything is evenly combined.

For dressing:

  • one c mayonnaise
  • half c  powdered Parmesan cheese
  • half cup balsamic vinegar (we use Newman’s own or homemade)
  • two teaspoons onion powder
  • one teaspoon garlic powder
  • two tablespoons dry Italian seasoning or dry thyme
  • half tsp red pepper flakes
Placing all dressing ingredients in  mixing bowl also whisk to smooth. Pour over salad ingredients and mix gently. Transfer the salad to a pretty salad bowl and top with cherry tomatoes and a sprig of fresh basil for garnish, if desired. Relax until you are ready to serve.
